Apple Pie Smoothie Bowls:
(2 people)
Mixture:
- 1-2 apples, skin on, sliced
- 1 cup of milk
- 2 scoops of vanilla protein powder (optional)
- 2 frozen bananas (cut into small pieces)
- 1-2 tablespoons of nut butter
- 1/4 cup of rolled oats
- 1 tablespoon of flaxseed (optional)
- Pinch of cinnamon (and any other spices)
- 1/2 cup of ice (optional)
Toppings:
- Granola of choice
- Pieces of apple, sliced thinly
- Drizzle of honey/maple syrup
- Nuts/seeds
- Fruit of choice
- Coconut flakes
Directions:
- Blend all of the ingredients gradually in a blender, until a thicker, smoothie-like consistency. Do not overblend or else it will become too liquidy.
- Separate the mixture into two bowls and add toppings to your desire.
Breading Pudding:
Ingredients:
- 2 cups of milk
- 2 tablespoons of butter, plus more for greasing the pan
- 1 teaspoon of vanilla extract
- ⅓ cup of sugar
- Pinch of salt
- ½ loaf of egg bread, such as challah, or brioche or sourdough
- 2 eggs, beaten
- Desired amount of cinnamon, cardamom and any other spices
Directions:
- Heat the oven to 350°. Butter a small baking pan and set aside for later.
- In a saucepan over low heat, warm the milk, butter, vanilla extract, sugar, salt and spices. Once the butter is fully melted, allow for it to cool.
- Beat the eggs and then pour in the cooled milk mixture, whisking until it’s all combined. Lay the bread out in the pan and pour the egg and milk mixture over it.
- Bake for about 30-40 minutes or once the bread is browned. Serve once it’s cooled and enjoy.
